Our 100% Verdejo varietal, the flagship of the winery, is crafted from grapes grown in family-owned vineyards and old vines cultivated by small winegrowers.
This allows us to blend the complexity and diversity of the different soils within the appellation. The continental climate, with its extreme temperatures, ensures a slow aromatic ripening of the grapes while preserving vibrant acidity.
After harvest, the must ferments in stainless steel, concrete, and wooden vats. Once fermentation is complete, the wines rest on their lees for 4 months. The assemblage of these vinifications is what defines the uniqueness and distinctive character of our José Pariente Verdejo.
