The continental climate, with its extreme temperatures, ensures a slow aromatic ripening of the grapes while preserving vibrant acidity.<\/p>\n<p>After harvest, the must ferments in stainless steel, concrete, and wooden vats. Once fermentation is complete, the wines rest on their lees for 4 months.
