After completing the second of the three technical\u2011economic milestones defined for its implementation, the results obtained so far clearly demonstrate the influence of the interactions between viticultural management and oenological biotechnologies on the final character of the wine.<\/p><p class=\"translation-block\">The development of 4EVERWINES is based on a multidisciplinary integration of innovative viticultural and oenological strategies that guarantee the balance and stability of these wines\u2019 properties over time. This underscores the need to continue adjusting fermentation conditions in order to optimize product performance.<\/p><p>Specifically, the strategy applied during this project phase has induced significant changes in grape composition, including: <b>frescura organol\u00e9ptica<\/b>.\u00a0<\/p><p class=\"translation-block\">higher sugar content,\nincreased malic acid,\nhigher pH,\nand lower total acidity.\n\nThese changes translate into wines with higher alcohol content and improved organoleptic freshness.\n\nAt the fermentation level, the use of non\u2011Saccharomyces yeasts has been particularly noteworthy, as they helped preserve the varietal profile of these wines while contributing more herbal and balanced nuances.\nAdditionally, the co\u2011inoculations applied (Lt+Mp and Lt+Pk) showed better aromatic results compared to other fermentations, although fermentation conditions \u2014 especially temperature and tank type \u2014 influenced the appearance of reductive defects.<\/p><p><u><b>A qualitative leap forward<\/b><\/u><\/p><p class=\"translation-block\">The development of the 4EVERWINES project represents a qualitative leap in viticulture and winemaking R&amp;D. It not only seeks greater freshness but also greater stability of this freshness and of other key properties in Verdejo wines.\nMoreover, it applies a combination of innovative viticultural and oenological strategies that will enhance the characteristics of these wines.\nTo support this work, the project has a budget of \u20ac700,024, co\u2011funded by the Centre for Technological Development and Innovation (CDTI Innovaci\u00f3n) and European Union FEDER funds (2021\u20132027).\nBodegas Jos\u00e9 Pariente leads the initiative, with participation from the Polytechnic University of Madrid and the company GIVITI.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-f69414a elementor-widget elementor-widget-text-editor\" data-id=\"f69414a\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><strong><em>ABOUT 4EVERWINES <\/em><\/strong><\/p><p>4EVERWINES is an R&amp;D project whose main objective is to achieve greater longevity in organic Verdejo wines.
